Quick and Easy Chocolate Lactation Cookies

The perfect lactation cookie, truly does exist.
— Jessica Prescott

They are the perfect thing to whip up in early labour while you are trying to kill time, and they are the perfect thing to make as a new mum because of the inclusion of oats, peanut butter and hemp seeds which all act as galactagogues and assist in milk production. They are also the perfect thing to whip up when you have friends coming over and no treats in the house, as they come together in moments and cook just as quickly.

I weigh everything directly into a bowl for minimal washing up, which is also a bonus.

Makes 15 cookies

Ingredients list

  • 160g (1/2 cup) maple syrup

  • 200 g (generous 3/4 cup) smooth and runny peanut butter

  • 90 g (scant 1 cup) almond flour

  • 90 g (scant 1 cup) quick oats

  • 1½ teaspoons baking powder

  • 30 g (1/4 cup) cocoa powder

  • 40 g (1/4 cup) hemp seeds

  • 1 teaspoon vanilla extract

  • A pinch of salt

Optional extras

  •
Dark chocolate to drizzle over

  • Salt flakes, crushed pistachios or dried raspberry powder for dusting over the chocolate

1. Preheat the oven to 180°C and line a baking tray with baking paper.

2. Combine the maple syrup and peanut butter (heated gently to loosen, if necessary) in a bowl. Add the dry ingredients and mix to combine.

3. Roll the mixture into 15 balls and place the balls on the lined baking tray. Flatten them until they are about 1cm thick and bake in the hot oven for 8–10 minutes, or until you can smell them.

4. Remove from the oven and allow to cool on the tray. If covering them with chocolate, melt this and drizzle over the cookies, followed with a sprinkle of sea salt or something else yummy..
